Trinity to Welcome New Food Hall and Brewery This August: A Culinary

Hub Emerges

 This August, Trinity in Pasco County will see the opening of The Collective at Escape, a new food hall and brewery initiative by John McGregor and Matt Thompson of Escape Brewing Company. The venue, celebrating the brewery's decade in business, is designed to be a local culinary and social landmark. Delayed by the pandemic, this project will finally offer residents a variety of dining options within an 18,000-square-foot space.

The Collective at Escape will feature six food vendors, which will be announced on social media in the upcoming weeks. Visitors can anticipate a diverse menu that includes pizza, sushi, coffee with doughnuts, smash burgers, fried chicken sandwiches, Asian fusion, and street tacos. Alongside a craft cocktail bar, the space will also serve Escape Brewing’s beers like IPAs and fruited sours.

An outdoor beer garden will host live music and games such as bocce ball and cornhole, enhancing the community vibe. The project's architecture and construction are handled by Edge Architects and The Perry Company. More information can be found at thecollectiveatescape.com.

Unexpected Closure

“Another One Bites the Dust!” (Why?)

Ybor City has bid farewell to a long-standing culinary establishment, the Stone Soup Company, which closed its doors unexpectedly today. Situated on 7th Avenue, this casual dining spot was a favorite for its diverse menu featuring Cuban sandwiches, empanadas, various burgers, and a selection of soups like lobster bisque and tomato basil. The restaurant also served a variety of beers, wines, and cocktails.

Opened in 2009 by Ilya Benjamin Goldberg, Stone Soup Company quickly became known for its fast service and delicious Cuban sandwiches, earning multiple "Best of the Bay" awards over the years. In late 2022, Goldberg decided to retire, transitioning the ownership to make Stone Soup an employee-owned business through the assistance of Teamshares. This move was intended to secure a stable and prosperous future for the restaurant. However, despite the promising outlook and initial success under the new model, the restaurant announced its closure today.

Under the new management led by Mike Long, a seasoned sales veteran, Stone Soup Company had shown promising growth, with a 16% increase in sales in its first year as an employee-owned entity and an anticipated 24% growth in the following year.

Nonetheless, the restaurant's closure adds to a growing list of recent shutdowns among bars and restaurants in the Ybor City area.

Cinco de Mayo

In Tampa Bay, Cinco de Mayo is a lively celebration of Mexican culture, highlighted by street festivals, traditional music, and educational events that honor Mexican heritage. This day commemorates the Battle of Puebla, offering a chance for the Mexican-American community to celebrate their cultural pride.

Key spots for Cinco de Mayo festivities in Tampa Bay include:

  • Casa Tina in Dunedin, known for its healthy, authentic Mexican cuisine in a family-friendly setting. The menu features additive-free, often vegan or gluten-free dishes like Ceviche and Mole Poblano.

  • StreetLight Taco in Tampa, recognized for its innovative Mexican dishes in a chic urban setting, and recently awarded a Michelin Bib Gourmand.

  • Besito Mexican Restaurant in WestShore Plaza, famous for its extensive tequila selection and vibrant Cinco de Mayo celebrations with live music.

  • Green Lemon in South Tampa, offering a modern twist on traditional dishes accompanied by strong margaritas.

Battle in the Bay: Tampa to Host Spectacular Military Demonstrations During SOF Week

 SOF Week is set to energize Tampa from May 6-10 at the Tampa Convention Center, drawing an estimated 16,000 attendees from nearly 80 nations.

The event will spotlight the "Battle in the Bay" capabilities demonstration by the United States Special Operations Command (USSOCOM), featuring military tactics from 10 countries. This demonstration will occur on May 8 at the waterfront, showcasing operations by land, air, and sea with helicopters, drones, and ships. It's open to the public, with viewing areas along the Tampa Riverwalk and nearby locations. Due to the expected loud noises, such as mock gunfire, ear protection is advised.

The week also promises significant economic benefits, projecting an impact of over $12 million for Tampa. Traffic around the convention center will be heavy, especially since the parking garage will close from May 5-9.

Additionally, SOF Week will support community initiatives, including assembling hygiene kits for the homeless and the launch of "GSOF Gives Back," funding local SOF-supportive charities.
